Easy Butter Chicken and an update on my move!
I've arrived in Toronto!
The first thing I did was go to Ikea. While I didn't go specifically for the food, it was definitely a fantastic part of the experience! Instead of the classic Swedish Meatballs, I went for the Butter Chicken and man, was it ever good! Which got me thinking- could I make it at home?

The answer is yes!
I found a fantastic website called One Dish Kitchen...a website dedicated to single serving recipes! I found the recipe Butter Chicken for One and knew that I had to make it, but I made a few adaptations along the way. Keep reading for my recipe.

I began by marinating 2 cubed chicken breast in:
1/2 cup sour cream
2 tsp garham masala (I buy mine pre-made at Bulk Barn)
2 tsp tumeric
2 tsp cumin
Mix in bowl and marinate in fridge for as long as possible (approx: 30 min)
While the chicken is marinating:
Chop 1 small onion and cook in 1 tbsp butter, along with minced garlic (about 1 clove or 1 tsp)
Mix and add to onion and garlic:
1 tsp cumin
1 tsp salt
1 tsp cinnamon
Follow by adding:
1/2 cup No Sugar Added Ketchup
1/2 cup water**
Simmer in pan until mixture thickens and reduces slightly, about 10 minutes
Add marinated chicken breasts to pan and mix. Cook until chicken is no longer pink.
Serve 1/2 chicken mixture over basmati rice, cauliflower rice, or Konjac rice.
This recipe makes 2 servings of butter chicken.

A) Add heavy cream or coconut milk instead of water
B) Use butter liberally
